Focussed on sourcing the best Australian seafood and other ingredients available. The ocean trout is farmed in Tasmania and flown to Sydney several times a week. Once delivered, it is painstaking filleted, pin boned, each fillet is hand rubbed in a unique cure mix and smoked. Seventy two hours later our special smoked trout, smoked trout rillettes, wasabi cream and Tuscan pickled onions are ready to enjoy.
